There is no such thing as “parts” in seasons.
There is only
TV Show > Season > Episode

How do you come up with the “part”?
Is it discs from a box set?

Yes Otto. There are two boxes for disks one labeled season 3 Part 1 and the other Part 2. I know… strange

Simply combine the episodes of both parts into one season.
The division of this season into parts is just a technical thing because a disc has a limited storage capacity. Since you are ripping those discs, it doesn’t bear any importance whatsoever.

Make sure you match the episode numbering to what is on TheTVDB. DVD episode numbering can often be wildly different than the ordering when a show was aired. Compare the known episode title (play the video) to the number that TheTVDB says the number is. I believe by default Plex uses “aired order” for all libraries unless you choose otherwise.

There are two options we should look at on TheTVDB. Aired order (the order and date the show released), and DVD order (the order episodes are arranged the first time a DVD box set is compiled). It’s quite likely that the “DVD order” matches what you ripped per episode, and if so that’s fine. But if that order is DIFFERENT than “aired order”, then you need to tell Plex to use “DVD order”.

Using the right episode numbering and “order” setting in Plex is pretty important. See, Plex only really cares about the SxxExx part of your file, and compares that to the order you specify on TheTVDB. So if the DVD S01E01 is - for example - a christmas episode, and the ORIGINAL first aired episode was the pilot, then Plex will gather the wrong metadata for the episode and the description and title that plex shows for your episode will not match the actual file.
