I am not sure if this is a proper place to post this but I didn’t know anywhere else, so I apologize in advance if it is incorrect.
Anyways, I have bought these Bluray discs and I am in the process of ripping them to place into my Plex server install but I am not sure how to name them or how to name the various titles. Any suggestions?

I think these are episodes from this tv show, but assembled into a different order than in the originally broadcast version:

So they belong into a tv show library. Rip each episode as a separate file, then you can re-order them into the original broadcast order and add them into your library.
The alternative would be to just add them into a personal media library, but then you’ll have to add any metadata yourself.
Is there a a way or website to identify the different titles to each episode number and name?

See the first link I provided in my response. There are all episodes of all seasons in a neat list.
Since Plex uses TheTVDB top fetch metadata, it is the ultimate source for looking up season and episode numbers.
