Every time I move my media to a different hard drive, I have to re-enter my sort-titles and re-set all my chosen poster covers!

to lock a field, just click the lock sign to the left of a metadata field
A field that has been locked will not be overwritten when reloading the metadata for this item or the entire library.
You should be able to deactivate live tv and channels in the settings:
Settings > Server > Channels and Settings > Server > Live TV & DVR
That seems to work for sort-titles… any idea for chosen posters?
