How do I remove unwanted tag? I have a few misspelled, I would like to delete from the drop-down menu. Where is the log stored? It would be nice to be able to edit the tags log, if I knew where to find it.

I believe Plex will remove the tags once nothing uses them. once you remove them from all items Plex will remove them at least that is what I have seen.
I am not sure if you are able to edit them and then it would just be fixed everywhere.
