How to set bitstream or passthrough as output in Plex Media Server/Player?

Latest server version, running Roku into Pioneer 9-channel receiver.

The Pioneer sees the audio stream coming through as 2-channel stereo and therefore I don’t get the True HD sound I’m looking for. I’ve read that I need to enable Plex to send bitstream, or simply pass through but I don’t see where that’s done. Any help is appreciated.
