I haven’t used it myself, but several people have said that they use an app called Media Monkey to organize their files into the proper folder structure. You might look into that to see if it can ease the task for you.
If your embedded tags are in very good condition as outlined in Trumpy’s post, and your Plex server is fully configured to prefer embedded tags, the folder structure isn’t as important as it used to be. But if your tags aren’t in good order, the file/folder structure is essential. So between tagging and organizing files — which one is less work?
