I am confused in regards to my plex account and my server

I originally had a Plex account under the name of “Fornet 20” but due to my server constantly shutting down I did a full reformat of my computer (as recommended on Google - which worked!). When I reinstalled Plex, without thinking, I called my server “Plex Fornet”. When I opened Plex I found that I had lost access to settings and could only access Plex Fornet by clicking on the “More” option. This opened up Plex Fornet, but again there was no access to settings.

It was causing a problem on my Phone and so I decided that I needed to do a full uninstall and a reinstall which I did. I called the server “Fornet”. This seemed to work and I had settings returned. However tonight I seemed to have gone back to square 1. On opening Plex I again have lost settings and I have to click on “More” to get to my server “Fornet”, but now below Fornet is “Plex Fornet”. This again is causing problems on my phone.

I note also that my account at Plex is still under the name of Fornet20, but again I don’t know where to go to adjust my account name, there doesn’t seem to be a login path.

I don’t know what to do to get back to a clean operational Plex.

The ‘friendly name’ of your server has nothing to do with the ‘user name’ of your plex.tv account.

Your new server is signed into your plex.tv account, as far as I can see.
What you are struggling with now appears to be the customizable home screen and side bar in the newer plex clients.
Some of your clients may still pointing to your old server from their home screen. On these clients, you must reset the home screen and pick a different ‘default’ server.

e.g. on app.plex.tv you can find this under
Settings - Web Client - General - ‘Show Advanced’ - “Reset Customization”
