I have 2 plex media servers on my network and both need external access

Have you tried it? They both should work automatically if upnp is on your router.

I’ve done this with the port forwarding approach. You have to set up two different external port forwarding rules on your router. The port forwarding rule for the first port goes to one of your Plex servers, and the second to your other Plex server.

Then in each of your Plex instance you have to also set the public port in the Plex web remote access configuration to match the public ports you set in your router’s port forwarding rules above.

Basically, you pick two external ports, one for each server, then forward one to each Plex server. The internal port is always 32400. Your router should let you map ports as needed.
