Connecting an iPad to a TV via HDMI now results in Plex app essentially screen mirroring the iPad display- it doesn’t fill the TV screen anymore. Any workaround to solve this?

Same problem here
This is a “feature” of the new iOS client. (It’s a disaster, the more you look the more you’ll find is missing or broken)
The workaround for me was to get VidHub, you could also try Infuse.
Have you tried changing the Display mode on the iPad?
Whilst playing a show Tap display, go to ⋮ Bottom right and look for Playback Options Change the aspect to Zoom
This is a ridiculous issue. Plex is getting rewritten for their spam ad filled tv rubbish rather than focusing on its products purpose.
