I’ve been suffering with the issue described in this closed topic for a while: Plex on AppleTV hangs on playing next episode
I can confirm in my setup where the Apple TV uses 2 HomePods as the speakers, turning off the new audio engine fixes the issue and allows the next episode to play. HOWEVER with the old audio engine there is a very slight delay in the audio. Hopefully this information is helpful in debugging. Both server and player are latest public versions at this posting.
