Library scanning outside of folder

I recently noticed the plex folder on the NAS system was getting very large. Folders were also being populated with music and videos from other folders not specified in the target location (i.e. I have folders on NAS / libraries on PLEX named Pop Music, Classical Music, World Music etc.). I tried to delete Plex and all associated files on the NAS and start again but the same thing happens. Anyone know why libraries are being populated with files that are not pointing to the target folder?

Would you mind sharing some more details?!
I’m not sure I understand what you experience (e.g. what folders are located where and how they’re associated to your libraries in Plex).
