Live TV Keeps Buffering after ~an hour of playback, signal good

Hello!
I am using the HDHomerun Duo as a TV source, streaming via Plex to a RokuTV running the latest version of Roku Preview (this also happened on the latest version of the standard Roku player, I moved to this preview to see if there was a fix)

While playing (tested on several channels and all have good signal quality and no error rates) after some time (about 30min to an hour) playback will stop, show buffering at 33% and then fail out saying “We could not reliably play your Live TV channel, it may be due to a weak signal”

I pulled the logs and while I dont know what I am looking for I think I can see it start buffering, but not buffer any data, and eventually fail.

I have tried direct stream as well as disabling MPEG2 to force transcode and both have the same behavior.

Server is plenty powerful enough (i3 9100), all connections except from the TV are wired.

Hope someone who knows how to read logs can offer some ideas - thank you!
