The server log shows channels tuned ok and transcoding running ok
Can you tell me what you have on your account setting for audio selection
Go to https://app.plex.tv/desktop and in top right corner, open up the drop-down and click on Account
Where it shows “Audio & Subtitle Settings” click on Edit and tell me if you have this ticked
Automatically select audio and subtitle tracks
(I have come across issues with similar symptoms on channels with more than one audio stream and similar symptom arises the audio language selection is not set to automatic)
If it is not this, then would need more detailed investigation with browser console network logging and related server logs
