Fill the checkbox, you can get in to that user’s account without any selection of user or PIN.

Once you enable the checkbox, the last-used user account is automatically logged in upon app start.
If that last-used user happens to be the Admin, then yes, you would be logged in to the admin account upon next app start.

Put a PIN on your admin account, but no pin on this user’s account.

That’s not possible. The only options are “always show the user selection screen” or “always log in as the last user that was signed in”. There’s no, “always log in as User X, even if they weren’t the last account signed in”.
Are your family members in the same household as you? If not, it may be easier to add them as standard friends (see Managing Library Access | Plex Support), not as home users.
