I confess to being a total noob when it comes to this so apologies for anything stupid said below!
I have had an ATV3 since it was released in the hope it would be jail broken quickly HA!
But now I feel with PlexConnect I can finally make use of it and get my home media in order.
Right now the set up i'm thinking of is as follows:
2TB AirPort Time Capsule - To store all my media on
Mac Mini - To run Plex Media Server
ATV3 - To run PlexConnect
Would this work OK? What specs would the Mac Mini need could I get away with a old model? All my media is in mp4 format already.
I am curious to know, why you want to use plex server if all your content is already in mp4 format as you can iTunes and home sharing to stream content to ATV.
To answer your question, if your mac mini is recent one (i.e., dual core), then the proposed setup would work.

Great point! I don't want to have to start up my MBP every time I want to watch some of my media collection on the TV, its just starting to be a real bug bear.
If your media is already in ATV compatible format and you don yet have a Mini or time capsule you might just be enter getting a NAS.

As f00b4r suggested, if you need to buy mac mini and time capsule then i would say it is better to buy a Nas like Drobo 5N or some other Nas(s) which can run plex media server as your content is already in mp4 format. Most of the Nas(s) these days can act as time capsules to back up your MBP.
You can find the list of Nas(s) that can run plex media server somewhere on plexapp site. Sorry too lazy to provide you the link.
You want to make sure that you get one that runs PlexConnect as well as PMS.
I am not sure if the Drobo does but Synology, QNAP and ReadyNAS all have versions that can, just make sure you check the link on the Plex wiki to fully understand if you need transcoding or not (you really want to get it right before you buy or you may find a lot of frustration).
EDIT if you already have ATV compatible media and plan on only getting this in the future (or converting those that are not using e.g. iFlicks) then you will have the widest choice.
