Not an expert and I dont know how to read the logs but. My guess is something changed.

Did plex update recently? Or has the Xbox been updated recently? Same thing with the Plex app on the Xbox? Also do any other devices connected to the server have any issues?

Same problem here, something changed recently. I’ve torn my setup apart troubleshooting and it always comes back to the Plex Xbox app.
