I kind of like the way you can add multiple drives together in Windows to make one big drive and am thinking of moving my Plex server to my windows 2012 server. I tried running everything on my Mac and just serving the files from my server but I've given up ever having a reliable network connection from my Mavericks Mac to a Windows machine.
So, can I move the certificates I created on my Mac to my Windows PC? That would make it pretty easy in that I'd only have to tell the ATVs to look to Windows PC for DNS after I've installed Plex and Plexconnect on it.
Just one point worth mentioning, Though Storage Spaces is good in theory performance wise it (still) isn't that great.

You will see that write speeds for all your drives are halved.
Basically Storage Spaces was developed after the fallout that Microsoft got after taking away Drive Extender for WHS v1 and offering nothing in its place for WHS2011.
There are better 3rd party options available that have been around since the Launch of WHS2011. Namely Stablebit Drivepool and DriveBender. Each of them will let you read each INDIVIDUAL drive in ANY window system. If you find that Storage Spaces isnt working for then they may be worth checking out.

Thanks for the mention. I was an early adapter of Storage Spaces and I ended up losing everything. Fortunately I was not too trusting and had a backup. I purchased Drivepool and scanner and couldn't be happier. I like the fact you can take a drive out and read it in another system that can read a NTFS volume. I'm still not too trusting, I have a backup too.

Yep always have a backup. :D I deliberately didn't mention my preference only the recommendation of either over Storage Spaces. I tried both at very early beta and just found DrivePool more user friendly. I dare say DriveBender is equally as good nowadays but ever since i have never felt the need to switch. Alex just seems to respond very quickly to feature requests. :)
