Moving from NAS to Server 2019

I have been using Plex for a long time on my Netgear RN204 device but it has now reached its limit in terms of capacity and cannot be expanded anymore.

I have an HP DL380e with Server 2019 running on it and I have a few questions before I transition across:

1 - all the data will be the same, so I can copy that across the network no problem on my 10GB SFP network. In terms of the meta data which I have customized over the years (thumbnails, renaming of files to a specific order etc) can I just copy this across from the
%LOCALAPPDATA%\Plex Media Server or is it not as simple as that?

2- Is there a way to somehow sync the data between the two and then once its completed remove the RN204 from Plex?

I’m just looking for the quickest/easiest way to not have to re customize all the metadata
