I am trying to move my Plex Media Server to a new PC. I was hoping I could set it up from scratch just like I did on the original computer as long as they weren’t both online at the same time. However when I try to set up the new server it just keeps looking for the old server which isn’t online. What is the correct way to do this? Do I have to first delete the old server?

No. You can set up as many server instances as you like.
