Moving Plex to new disk

I’m going to replace the disk (currently just one) in my ReadyNAS 212 which is running Plex Server with two new disks (RAID 1). What is the best way to preserve my settings, etc? ssh into the NAS and zip up some directories, copy them to another machine/disk and then unzip them on the new disk(s)?
