Moving server to a computer with older Windows version

I just set up Plex on my laptop and find that I can’t leave it running all the time. I’m going to move it over to an older laptop that I can leave up. New laptop is running WIN 10. Older one runs WIN 8.1. Will I be able to move everything over or should I just start over on the different laptop? Can I simply set up a new server and delete the older one? I only have a few movies on it at the moment so it might be a good time if that’s possible.

I suppose you should be ok to move the setup. Windows-to-Windows should be relatively simple, even if the versions don’t match.

You should check if you can update Windows to version 10. Most Windows 8 system actually can be updated free of charge.
Because Windows 8.1 is out of support for years now: Windows 8.1 - Microsoft Lifecycle | Microsoft Docs
There are no patches available for newly found security issues after that date.
Connecting such a system to the internet (which is what you will be doing when you install Plex on it) is irresponsible.
