There are a couple of things to do to make sure Plex is looking at your embedded tags first. Follow the steps in this post. I don’t think you can tell Plex to NOT consult external sources, but this will tell Plex to look at external sources only when your local tags are missing.
If your tags are in good order, the naming of the files should be unimportant. And, yes, you’ll need to use the Plex Dance workaround, since the Refresh command in Plex doesn’t work.
