I have a quick question about metadata and renaming. I have noticed that plex uses the metadata of files to populate its sort and name fields. How do i edit this metadata to better control what names are used, most noticeable in TV shows. I currently use Sonarr and Couchpotato for management, thanks.

Only if you let it. And only with mp4 files.
It is usually better to not use embedded metadata, at least for video content.
There is often useless junk in the embedded metadata.
If you wanted to correct that all, you’d have no time to actually watch your media
Settings - Server - Agents - Shows - TheTVDB
In there, grab the line ‘Local Media Assets’ with your mouse and drag it downwards, so it ends up being at the bottom of the stack of active agents.
repeat the same under
Settings - Server - Agents - Shows - TheMovieDatabase
and
Settings - Server - Agents - Shows - Plex Movie
and
Settings - Server - Agents - Movies - TheMovieDatabase
