I’m a bit confused as to what I have to do to get the new interface. I’m a Plex member and use plex with my xbox and Samsung tv. Both of them have the old version.

The new interface is for the Plex Media Player application.
This is an application used for desktops (Windows, MacOS, Linux), not the one for apps.
If they are going to be porting this interface over to the other devices, it will take some time and then you will get the interface when it’s ready and an update for the other device’s app is available.
