New plex media server, same computer

Upon updating plex (or reinstalling?) plex re-ran the setup process. Now, when i launch the plex media server, it starts a new server instead of my old server, which was nicely configured.
I tried doing a few things (i don’t remember what, it’s been a week since i had time), and i was able to get the old server to boot again.

Is there any way to delete the new server, and make sure the old server boots consistently?

Perhaps PMS running wrong server
