I built a new PC and migrated all of my media over. I made a new server and deleted the old one. When I go to the home page on roku or the web app, it defaults to My Headlines and Recommended stuff. I can only access my media by clicking “More”. How do I get the new server to show up as the new home?

The libraries of the new server are probably already showing up under the “More” button in the main navigation.
You can either manually “pin” the ones you want to (so they show up in the main navigation) or Reset Customizations on the home screen. Resetting customizations should result in Plex letting you pick your preferred/default server and the libraries you want to be pinned in 1 go.

Edit: same goes for Plex Web → either manually pin the libraries or reset customizations for Plex Web
Settings > Plex Web > General > Reset Customization
