When plex gets new version of a movie, it then makes it as unwatched again but the activity shows it has been watched. Is there a way to disable plex from making the new version as unwatched again?
It appears your new version has an Edition tag, the old one has not. Thus it is a different identity.
Is there a way to ignore different editions?
No. Editions were introduced because they provide a separate identity.

Thank you, I removed the edition from my file names and this resolved the issue.
