Can PM server logs, but nothing will get metadata or posters. Default info is 1900-01-01. I have even tried manually matching but nothing happens.

No, MKV. It only started a few weeks ago, and seems to be hit or miss. The Suicide Squad is my most recent example as well as Pig earlier this week.
Also, not sure if you have any kind of resolution for this either, but has Plex seemed very sluggish if you try to change a poster? Any of the posters pulled from TheMovieDB take around 3-5 minutes to save after clicking the poster and applying.
Sadly I don’t have a solution.
I saw the same issue with 1900-01-01 however it only seemed to affect a few .mp4 documentary shows I pulled.
As for posters etc, I let Plex do its thing and use whatever it chooses in the main.
For personally curated posters I use TPDB and store them alongside my media files.

Same issue here, with “The Suicide Squad (2021)”. Impossible to match the release, even using the manual match feature. Seeing the same “poster”, and metadata as posted above.
Also mkv format, for what it’s worth.
