How about adding PMS to the image so I can also play files from my USB drive or streaming via DLNA (my PMS server is down due to a crashed hard drive).
That might not be possible, as I don't have access to the src of PMS and it would likely require a different build for each version. But if someone wants to test it out, the binaries from the Ubuntu/Fedora/debian packages are all the same. Based on a 10.04 LTS Ubuntu, so if binary compatible with OE it should work.
I'm focussing on the client for this project. For addon's feel free to pitch in. There is ssh axx to the OE builds.

+1 Yeah, the Cubox is a great little piece of hardware. I'm currently running OpenElec on it and just settling for PlexBMC. It'd be nice to have a native PHT, PlexBMC is clunky.
Since OE is already running, shouldn't be that hard. I'll take a look and see if I can't figure it out.

You will have better luck looking at Rasplex for cubox as it's arm based. I'm only focussing my efforts on Intel based platform. But it's a cute little box the cubox-i.
Earlier this year when I updated my NUC from OE (with XBMC) 3.2 up to 4.0 it really smoothed things along, since then I tried your Plex on OpenElec. While I love having a slim OS build with Plex HT. I have a few problems.
1,When changing screens the entire screen flickers
2,it appears like the colour space isn't correct for the hardware (fixed in OE 4 xbmc)

Flickering stuff, have you tried setting vsync settings to only during playback?

Is there an easy way to update the Plex binary or do we need to do a fresh installation every time we want to update? If the latter, is there any advice to streamline the process? (maintaining system preferences etc)

The normal update procedure for OE is (if auto update works) is to pull the SYSTEM and KERNEL file down to the /storage drive. This folder is also shared over the network. And then reboot OE.,similar method can be done manually as shown here: http://wiki.openelec.tv/index.php/Updating_OpenELEC

Sorry to distrub you guy's.Am biginner for PHT>I have installed new version of Plex Home Theater.1.2.2 on ubuntu14.04 LTS.When i enter into this path(opt/plexhometheater/share/XBMC/addons/skin.plex/media) i haven't seen any png files.there is only one file that is texcture.xbt.
I have been playing with PHT on VM with Ubuntu. I have a Rasplex up and running but want to move up to a more powerful system. I see that OE and PHT are running great on NUCs but I am considering less expensive hardware from Gigabyte. Has anyone here tried OE + PHT on the following hardware?

Any help, guidance, comments would be appreciated. I'm trying to build as many as 5 of these boxes so I really want to keep the cost down and I find the NUCs a bit pricey.
Great work Mark. Is there also a script for Linux? I mean to have it like under windows, that the script makes a boot stick. I do use Linux myself but I cant programm. Thats why I am asking. I do have also a Windows PC so I dont mind if you say no. I just think there are also people using Linux, which dont have a Windows PC. Just a thought.
I have this running great on my Chromebox. I only have one problem...my blacks are all washed out. They are more like dark greys. Is there any way to dig deeper into the video settings than what there seems to be? Is this a common issue or am I an oddball?

EDIT: I figured it out. I had to perform some SSH wizardry. I still have no idea why I needed to use SSH to do this and why it's not in the settings but hey, it works.
