I have some training videos and such from a few different sources that I would like to organize like TV Shows with seasons and episode numbers etc. But when I Create the library as TV Shows most of the videos don’t populate assuming because they aren’t really TV Shows. How do I get around this? I have tried using the Other Videos library type but then it doesn’t organize the media into the seasons and episodes and Movies gives me the same problem.

What do you mean by “populate”? If you mean they don’t get metadata, that should be expected. Your personal videos will never match a public database of TV shows. You would have to manage all of the meta data and media yourself - posters and backgrounds.
Here’s an example from my own collection. This show was a popular Chicago chef that got bored during the lockdown and started doing 5-15 minute youtube cooking shows.
Another tip is that “season00” is sort of a grab bag - I’ve put ~related material in season00 with a high episode number, like s00e101. Again, you have to do all of the meta data work. This works for TV shows that are found in the public databases.
The media is in the folder of the file system but some of the media never shows up in the library in Plex when I set the type to TV Shows. I expect that I will have to do all the metadata work for sure.
When I’ve seen this, I’ve fat fingered the magic numbering convention. A bad example: s5e4 versus s05e04 or s0504 and not s05e04. You might want to double check those names. That’s really the only time I’ve had videos not show up.
It doesn’t have to be SxxEyy, but that is the recommended method. There are a few other number systems that could be used, but those can be hit and miss.
