Plex Dashboard not showing video file type, direct play, or transcoding

Help! This is my first ever post. I’ve been running a Plex server on Unraid docker for over 4 years and I’m at a loss. Please forgive me if this is long winded but I’ve been fighting this for nearly a month now.

While upgrading an SSD within my Unraid Cache pool, the Plex appdata folders held in the cache pool was purged. Actually, all of my docker folders help within the appdata was deleted. I restored the docker containers, rebuild the appdata folders in the cache pool and they all work fine. I rebuild the Plex docker and had to add back all of my video files to Plex and let it rebuild and since then it has not been right.

Besides a lot of random crashes, the docker container started to fill up quickly. I have a larger Plex server, 162 TB, so I move the docker file size out some which helped some. As Plex builds I often will need to stop it, remove the docker to clear out temp images, then re-add the docker and continue Plex building. I created a /tmp directory and folder and the files started to go there, images from I assume chapter building, which worked for a bit.

My main problem is that Plex no longer shows the video file codec when playing a movie. I deleted the codec folder and let Plex rebuild it, and that did not work. I deleted the DB files and let them rebuild and that did not work. I removed the docker I have used for years and switched to the linux Plex docker and that brought it back. But only for a week. The recent Plex upgrade removed the codec again overnight with the update. I removed that docker and tried the various others, removing it completely - image and file folder - and re-building either by template or from scratch and nothing works. It is driving me mad and I believe it is impacting transcoding. When at home I should have direct play and it was trying to transcoded on several occasions.
