I’m using Windows 10 with PMS and I can’t seem to find the location of where the cached data is going. This applies to both videos currently being recorded and videos that are being played but not recorded (I’m able to scrub through what I’ve already watched, so I assume it’s being cached on something other than the playback device).
DVR’d content is saved into the library you specified for that recording. It goes into a temp .grab folder then moved to the appropriate location when it’s done.
Live TV content is saved into your transcoder folder.

Where did you tell PMS to save the recording to? It will be in there.
