Plex iOS can't connect to PlexMediaServer --> need to re-enter IP address

Server Version#: 1.23.6.4881 (latest public)
Player Version#: 7.21.1 (latest)
iOS version : 14.7.1 (latest)

How to reproduce the issue :

  1. Configuration (of PlexMedia Server)
1.1. Activate two network interface : for example 192.168.0.x and 192.168.1.x
1.2. Activate firewall (Ubuntu 20.04.3 LTS), and open only the required ports :

  2. On Plex app for iOS :
2.1. Do not “Sign in”, as we are on a local network
2.2. Enter the server IP (of the second interface) : Menu->Setting->Advanced->Server connexions->192.168.1.2
You will see all content of PlexMediaServer showing up, which confirms your connexion is working smoothly.

  3. Reproduce the issue :
3.1. Kill Plex app (really kill it, do not
    3.2. Start Plex app again
You will see that the app can not connect to plexMediaServer.
This is a bug, as we were able to connect just before.
3.3. Re-enter the server IP again (it adds a second entry with the same IP address).
You will see all the PMS content again ;-(

  4. How to solve the issue :
4.1. Use the web interface instead of Plex iOS app : 192.168.1.2:32400
But you loose all refinements of the Plex app.
4.2. Disable the firewall on the server side (as the problem comes from a dynamic port)
Strongly unrecommended for security reasons !
4.3. Use an old version of iOS : for example iOS 12.5.4
Strongly unrecommended for security reasons !
4.4. Use any third party app which allows connexion through uPnP
