Any specific reason the new player is demanding 10.12? I have a bunch of old iMacs I use as players and I’m suddenly finding they’re not going to be supported any more. They make perfectly good players. What feature of 10.12 is this new Plex app using that makes it demand such a high OS version? People tend to keep Macs a long-ass time.
And I won’t even start on the whole “dropping support for TV mode.” My lifetime Plex Pass gets more expensive by the day.

That min version comes from Qt 5 supporting macOS 10.12+.

Good news, PMP will be supported in maintenance mode (will not “break” but won’t get new features or bug fixes). Just stick with that
