why have you only attached one log file and only part of it
The logs are downloaded as a zip which also contains the crash reporting identifiers for any crashes to enable the actual dumps to be found and matched to logs
I will look for crash reports from your server

Waiting for confirmation that crash reporting is enabled in server settings and for the full logs zip after a restart of the server - wait 5 minutes after restart before getting the logs zip
If crash reporting is disabled, re-enable it and restart the server and then collect the logs

The logs show what looks like memory allocation failures - starting with this error

For previous reports of this error, Bitdefender was implicated - in that it was running on systems that were crashing with this. So that would be the first aspect to look into. If you do have Bitdefender and if the crashes are repeatable, then to uninstall it and see if the crashes stop
If Bitdefender is not on the system or if these crashes continue (would need logs of further crashes), then need to look into memory usage and see if there is a memory leak. The problem is arising during overnight scheduled tasks - so you could move the window to daytime and watch the memory usage of Plex Media Server.exe - you can use tools such as SysInternals VMMap with auto refresh to watch the memory usage and see if it shoots up and that together with the server logs would give some clues
Ok, I will delete all logs, start fresh and go through your steps. I currently have a restart script to re open plex when it crashes. I know notice it will crash 8 - 10 times in one night during scheduled tasks.

Thanks for the feedback. See if you can monitor memory usage with VMMap when scheduled tasks are running and we can tie peaks / climbing memory times to logged info
I am also running Version 1.11.0.4666 and found that the crash in this version may be related to auto adjust quality. I say MAY, because I was able to reproduce the crash locally (intra) with auto adjust enabled, but, while my friends have indeed disabled auto adjust, it still crashed frequently. Please advise if a fix is imminent. If not, how can I downgrade without losing my database(s) and metadata?
Logs taken now are attached. Last crash was last night.

You took over 17 hours after the crash to collect the logs. I can tell you it was the same crash as seen due to iOS and tvOS devices playing back with Automatic Quality Adjustment enabled. However, I cannot tell you which device it was relating to as the logs have long gone
