Personal Opinion: I would never enable auto-updates, especially if running the beta (Plex Pass) releases. The last thing I want is for Plex to auto-update and there is an issue that impairs playback, crashes the system, etc. The update could happen at any time, and I might be in a location without access to my server to fix things, possibly for days (vacation, business travel, etc).
Unless there is a compelling reason to update, I generally wait days or weeks before updating my production server. My production server stays on the public (non-Plex Pass) releases and is frequently one or two releases behind the current version. I also have a backup server which is loaded with the current beta release. This lets me test any new features before deploying the update to my production system.
I spent too many years in customer support, helping customers recover because they slammed in software updates as soon as possible w/o regard for the impact to their network and systems. Granted, I’m running a system that streams movies, not one that impacts company revenue, but I’m still cautious.

- The activity icon tells you if an update is available.
Settings → Server_Name → General
- Displays the current version.
- Displays if your server is up to date or if an update is available.
- If an update is available, displays the new version number and the release notes.
