Plex resizes screen when playing video only on Xbox One, black box on all sides

I just created some new MP4 files the same as I’ve done many times before. The files play on Plex Android and Roku with no issues but now when I play these files on Plex for Xbox One the whole screen resizes and I end up with a black box around the whole video (and it includes the Xbox UI as well as I can demonstrate by pressing Xbox button on the controller).

Seems to be an issue with the Plex Xbox app. Is anyone else running into this or seen anything like this before?
