Setting up server, using Add Library > Add folder > Browse for Media Folder, I’m only offered places on the C drive. My media will be stored on a network drive. How do I get Plex to see it?
You can type the UNC path directly, like \\NASName\ShareName\Media.
Or you can map the network drive to a drive letter.

To complement the above:
If you are running Plex server as a system service, the UNC method is the only viable option.
As drive letters are connected when the user is logging in. Which never happens when a service is started.
If you only added the drive letter after Plex server has been already started, you must stop and restart Plex server before it notices the additional drive letter.
