For the past week or so I have been getting the message “Plex server unavailable” on both of my Fire TV-s. The server is up and running - accessible via web browser and Roku. The server is on the same network. Any thoughts? Thank you!

Update your server software version.
1.20.3.3483-211702a9f is too old for newer Android clients.
