Actually, it is set to send it’s logs Settings > advanced > log to media server.
Debug log level
(Persists for 8 hours so last zip was while enabled)
I will go digging but I don’t remember seeing player logs in it.

Yeah, I’m SSH’d in, if it’s a separate file it’s at the minimum not dumping it into that same log folder /var/lib/plexmediaserver/Library/Application Support/Plex Media Server/Logs
