Plex recently added an option for that, but it’s aiming at users setting this for themselves.
There’s now also a suggestion to have such a timeout for the server owner.

Add ability to turn off autoplay at the server level

Ideally there would be the ability to configure the number of shows to autoplay before stopping (e.g. how Netflix handles autoplay). Barring that, there should be a setting to disable autoplay at the server level. There are many times when users fall asleep while watching a show and needlessly waste bandwidth while content continues to stream all night. This also is problematic for keeping track of your progress through a show.
