Currently my in-laws have a jailbroken ATV2 with the old Plex app on it (ATV and app provided by myself).
Now, my in-laws are not computer literate and they don't have a computer running all the time (and turning on a laptop just to have Plex is a bit too much for them).
As the old ATV app doesn't work with the new PMS releases, I see at the moment two possibilities:
Airplay with iPhone or iPad (they have that).
Or using PlexConnect.
Would it be possible to install PlexConnect on a VM in the cloud (I can have access to one), for instance on CentOS and by logging into "myplex" have access to my shared servers ?
If yes, what would be the HW requirements for the VM and where would I find the necessary information to install it ?

only if you want a few nasty security holes - why would you not just install it on the ATV2 itself?
Yes, this is possible, as I do the same thing for my parents. You can probably get away with a VM that has 256-512mb of memory. Although, if you want to enable fanart, you may want some additional processing power.

For security purposes, I use dnsmasq and apache instead of the built-in plexconnect services. I'd also recommend using the provided Settings.cfg, as all the communication/binding happens over the loopback interface.
Best method is to just simply sign into myplex. I personally install plexconnect directly upon my aTV 2’s using baa’s method that I modified into a easy to install .deb (post 231):

Just a last question: wha'ts the best way to remove the old app on ATV2 (including the icon) and how can I install the Plex Icon with PlexConnect ? As you can see, I am not Linux literate, but I can follow instructions and understand the fundamentals.
And a very last question. In the linked thread on your post, you mention to install NitoTV to have SSH on the ATV. If I jailbreak my ATV using Seas0nPass, don't I get SSH as well ?
I believe so if not just install nitoTV. I like nitoTV because it disables aTV updates by installing a few lines in a file to block apple servers upon install. You can install nitoTV (into installer) from any jailbroken device, windows or mac.
