Plex server not allowing me to continue on from adding a post code. Im UK based. How can I get round this please?

just to check: you are only typing the 1st part of the postcode (eg: OX26)?
The only known previously reported issue with this type of problem is one relating to having ‘Three’ as the broadband provider
If it is not this, please get server logs zip uploaded after a failed setup
