I solved, thanks anyway.
The problem is the TIM modem that did not correctly apply the Port forwarding.
I activated a Virtual Exposed Host addressed to the server, now it works.
Thanks for the log. It is just one log file - the last log file and does not cover the time when the server was restarted. My request was
Please restart the server and wait for next occurrence and then copy out the logs directory and zip the copy. Alternatively use the built in Plex Web facility for downloading logs See https://support.plex.tv/articles/200250417-plex-media-server-log-files/
Anyway, port mapping is failing. Plex Media Server is not able to find an interface to communicate with the router through uPnP. (Internet Gateway Device interface)

Check to see if uPnP is disabled in the router.
Sometimes settings in routers change after automatic firmware updates
You could also consider switching to a manually specified public port in the server settings and have a port forward in the router to forward the public port to local port 32400 and route it to the server local IP address (which must be dhcp reserved or static outside dhcp range)
