Excuse my ignorance, but I assume that this app will not work unless the server in question is on the same network as the Xbox. Or am I incorrect?

The application can handle both local and remote servers. If you can access the remote server in Plex/Web (via plex.tv), the Xbox One app should be able to work with it (as long as the remote server is also updated to the latest Plex Pass release).
