Bit of a weird one here, and it's only ever happened once so far (not long after updating to the version that was released a few days ago)
While watching a show, after fiddling about with the subtitles options for a bit (I can't remember the exact chain of events), we found that when we continued playing the episode, the Plex screen saver kept activating.
After two minutes of not touching the remote (even though the episode was playing), the screen dimmed, and after 5 minutes, the screen turned off (but the video was still playing in the background).
Returning to home, going menu->exit on the plex app, and relaunching seemed to fix the issue, but I figured it was random enough to report.
