Everytime I try to manually optimize database the server crashes.

Make sure you got plenty of diskspace. If you runout Plex doesn’t tell and will just crash as you found out AFAIK. Happened to me all the time till I moved it to bigger drive with tons of space!
This is on a 1TB NVME drive, lots of space.
