I’ve ripped the episodes of a tv show (Columbo) and added it to my media server. The episodes all appear, but for the first season only the wrong metadata is downloaded for all 9 episodes. What is the source Plex uses for this metadata? Where can I look at it so that I can name the video files appropriately?

We ingest metadata from TVDB or TheMovieDB. The MovieDB is default. Sometimes they do not have matching info for the order of episodes.
You can change the default for your library, or change for individual shows ( which has a few more options for TVDB).
TVDB appears to have 9 episodes for season 1 and probably matches what you have. TheMovieDB only has 7 and not the same episodes it seems when I took a quick look.
Your Library is likely set for TheMovieDB so you can Edit the show and change this to TVDB (aired)
