I had to restart my NAS as Plex was generating preview thumbnails for a series I just added.
How can I force Plex to continue generating preview thumbnails for that series?

Edit the library section (Hover over it, expose the ellipsis , Edit)
Go to the Manage - Edit - Advanced (tab)
Scroll down to where the thumbnail control is
Turn it off & Save.
Now come back into it and enable it then save again.
I don’t think it will start immediately but it will start generating thumbnails.
If it doesn’t,
Turn off,
Delete the thumbnails there,
Turn on again.
Wouldn’t that generate thumbnails for my ENTIRE library? Not just the single series?
If you deleted all the thumbnails then yes, it would regenerate them all.
If, as you said, it stopped while generating them , the first action should ‘kick it’ back into finishing what wasn’t completed.
That’s the only controls we have: Thumbs for the section on/off
Okay, what about getting it to continue detecting intros?
Same logic should apply.
I’ve not tested that yet myself. (been busy on some development efforts)
Do remember to check the appropriate Scheduled Tasks are all enabled
