Server shutdown 10-20 minutes and come back everyday

Wild guess but do you have any crón jobs scheduled at that time?

Also, your Plex Media Server.1.log has some interesting messages in it starting at 14:30 and then shutdown/killing at around 14:41. Not sure what is causing all that so will let one of the plex team come back with more details.
